Ingredients:
2 cups almond flour
1 tsp baking powder
1/2 tsp salt
1/4 cup dairy-free butter alternative, chilled
2 large eggs
1 tbsp honey (optional, for a touch of sweetness)
Almond milk, if needed for consistency
Instructions:
Preheat Oven: Set your oven to 350°F (175°C).
Mix Dry Ingredients: In a large bowl, whisk together almond flour, baking powder, and salt.
Add Butter: Cut in the chilled dairy-free butter until the mixture resembles coarse crumbs.
Wet Ingredients: In another bowl, beat the eggs (and honey, if using) together. Stir this into the flour mixture until just combined. If the dough is too dry, add a bit of almond milk to reach the desired consistency.
Form Biscuits: Scoop the dough onto a baking sheet lined with parchment paper, forming each biscuit. You can use a spoon or your hands.
Bake: Place them in the oven and bake for 12-15 minutes or until they are golden brown.
Cool: Let them cool for a few minutes before serving.
These biscuits should be fluffy and light, with a slight nuttiness from the almond flour. They're fantastic with a spread of dairy-free butter or as a side for your favorite meal.
